Homemade bread is simply a wonderful treat. With this sesame bread, you can do it safely and quickly.
The sesame bread is airy, crispy and tastes so wonderful because of the sesame. We love it.
You are also welcome to experiment with the seeds, it’s up to you – according to your taste!
Ingredients
- 500 grams buttermilk
- 70 grams water
- 10 grams yeast
- 1 tbsp honey
- 400 grams wheat flour (Type 1050)
- 400 grams spelled flour (Type 630)
- 2 teaspoons of salt
- 1 tsp. of malt
- 1 tablespoon of balsamic vinegar
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
- 2 tbsp flaxseed, crushed
- 1 tbsp chia seeds
- some sesame seeds to sprinkle
Instructions
Heat buttermilk, water, yeast and honey in a mixing bowl, 2 minutes/37°C/speed 2.
Place the remaining ingredients except for the sesame in the mixing bowl, use Interval/Knead function for 3 minutes.
Transfer the dough to a bowl and leave covered for 1 hour.
After the rest period, fold the dough into a loaf of bread on a lightly floured work surface/dough mat and place in a greased form. Brush or spray the dough with a little water, sprinkle sesame over it and bake with the lid in a cold oven at 230°C for about 60 minutes.
Remove the finished sesame bread from the mold and let it cool on a wire rack.
