Summer is coming! Who else prefers light lunches and dinners in the summer time – hands up. This delicious recipe is easy to make. So let’s go to the kitchen and turn on your Thermomix®!
- 3 ripe big tomatoes
- 2 garlic cloves (if needed, add more)
- 1 big red onion
- 1 red pepper
- 1 tbsp sugar
- 2 tbsp vinegar
- Olive oil
Grill your tomatoes, garlic, onion and pepper in the pre-heated oven at 230°C top/bottom heat. Timing depends on the size of your tomatoes but it can take up to 40 minutes.
Puree the grilled ingredients for 15 seconds/speed 9. If needed, you can peel the tomatoes and pepper.
Add the remaining ingredients (except for parmesan), puree for 10 seconds/speed 7. After adding salt and pepper, refrigerate for at least 2 hours.
As a final touch, we add olive oil and parmesan.
Please feel free to add water if you like it more liquid.
